Philosophy

My joy of life paired with a sunny disposition, spiced with temperament, were already laid in my cradle in my hometown Rossano in the southern region of Italy.

The olive-growing tradition has existed in my family for three generations. Since my earliest childhood, I have been actively involved in the production of olive oil - from blossoming to consumption. On my parents' olive plantation I learned to appreciate and get to know the earthiness.

It is my greatest personal concern to offer my customers the best!

For lovers of a high quality olive oil - a healthy pleasure a palate pleaser - a true "Oil Dorado" !

Region

The olive plantations are located about 300-400m above the sea, on the sun-drenched coast of Rossano and Corigilian in Calabria.

Here the trees always enjoy the influence of the salty sea air - these ideal climatic living conditions favour the cultivation for olive varieties of the very best quality.

Production

No machines are used in our harvest. We still harvest our olives and grapes by hand. Just like our ancestors did.
harvesting and production takes place on the same day (within 24 hours). In the case of olive oil, the first cold pressing takes place at 27-28 °C. Our production process is a purely mechanical process, without any chemical additives.

A lot of care

The plantations are tended with great care to obtain a fruity and first-class Olio Extravergine di Olivia and varietal oil from the Dolce di Rossano and Carolea olives. Fruity mild oil. 10 to 12 kg of olives are pressed to obtain 1 litre of Olio Extravergine di Oliva. Pure vintage oil. Especially the extremely low fatty acid content of only 0.1 - 0.3 % emphasises the extraordinary quality of our Olio Extravergine di Oliva.

All Natural

Seit Jahrtausenden erfolgt bei uns die Pressung ganz natürlich. In diesem natürlichen Verfahren wird das Olivenöl in einer einzigen kalten Pressung gewonnen. Das Pressverfahren ist ein geschlossener Zyklus um Unreinheiten im Öl zu vermeiden und somit eine hochwertige Qualität zu garantieren.

Olio Extravergine di Oliva can withstand the highest temperatures above 210 °C and thus more than other oils.

Store Olio Extravergine di Oliva well sealed in a dark, cool place. At low temperatures, the oil becomes gritty and cloudy. At room temperature, the oil returns to its original consistency and loses none of its quality.

Properties of our balsamic vinegar

Our balsamico is made from organically grown grapes. It is an aceto balsamico of the top league. Full-bodied and velvety, bright dark brown, the aroma is spicy-smoky, with a balsamic taste of sweet and sour. Depending on the final product, it is stored for years in different wooden barrels (acacia, chestnut, cherry and mulberry).

These balanced notes make our balsamic vinegar a speciality that stands for the highest pleasure.
